Chicken Meatloaf

 Ingredients:

– 2 lbs ground dark meat chicken

– 1 cup breadcrumbs

– 1 small onion, finely chopped

– 2 cloves garlic, minced

– 1 large egg

– 1/4 cup milk

– 1/4 cup grated Parmesan cheese

– 1/4 cup ketchup

– 2 tbsp Worcestershire sauce

– 1 tsp dried thyme

– 1 tsp dried oregano

– 1 tsp salt

– 1/2 tsp black pepper

– 1/4 cup chopped fresh parsley (optional)

– Ketchup or BBQ sauce for topping

 Instructions:

1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.

2. In a large bowl, combine the ground chicken, breadcrumbs, onion, garlic, egg, milk, Parmesan cheese, ketchup, Worcestershire sauce, thyme, oregano, salt, pepper, and parsley (if using). Mix until all ingredients are well combined.

3. Transfer the mixture to the prepared loaf pan and shape it into a loaf.

4. Spread a thin layer of ketchup or BBQ sauce on top of the loaf for extra flavor.

5. Bake in the preheated oven for about 60-70 minutes or until the internal temperature reaches 165°F (75°C) and the top is nicely browned.

6. Let the meatloaf rest for about 10 minutes before slicing and serving.
