Spicy Italian Chicken Sausage Pasta

Ingredients:

  • 12 oz curly pasta (like rotini or fusilli)
  • 1 lb hot Italian chicken sausage (casings removed)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 small red onion (diced)
  • 1 can (14 oz) crushed tomatoes
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • Salt & pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions:

  1. Cook the pasta: Boil the curly pasta according to package instructions until al dente. Drain and set aside.
  2. Brown the sausage: Heat olive oil in a large skillet over medium heat. Add the hot Italian chicken sausage and break it up with a spoon. Cook until browned, then remove from the skillet.
  3. Sauté aromatics: In the same skillet, add the diced onion and garlic. Cook until fragrant and softened.
  4. Make the sauce: Pour in the crushed tomatoes, chicken broth, heavy cream, red pepper flakes, basil, and parsley. Stir well and let simmer for 5 minutes.
  5. Combine: Return the cooked sausage to the skillet and mix everything together. Let it simmer for another 5 minutes until the sauce thickens.
  6. Toss with pasta: Add the drained pasta to the skillet and toss until well coated.

Finish & serve: Stir in Parmesan cheese, season with salt and pepper, and garnish with fresh basil. Serve hot!
