Greek Lemon-Garlic Chicken Skewers

Ingredients

 

Chicken & Marinade:

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 3 tbsp extra virgin olive oil
  • Zest and juice of 1 large lemon
  • 4 garlic cloves, finely minced
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 red onion and 1 bell pepper, cut into 1-inch chunks (optional) 

Herb-Garlic Yogurt Dip:

  • 1/2 cup Greek yogurt
  • 1 tbsp fresh dill or parsley, minced
  • 1 small garlic clove, finely grated
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

     

    Instructions

    • Marinate: Whisk olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and black pepper in a medium bowl. Add chicken cubes, toss thoroughly, and let rest for 15 to 20 minutes at room temperature. 
    • Assemble: Thread the marinated chicken pieces onto skewers, alternating with the onion and pepper chunks. (If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning.) 
    • Cook: Heat an outdoor grill or indoor stovetop grill pan to medium-high. Lightly oil the grates. Cook skewers for 8–10 minutes, turning every 2–3 minutes, until grill marks appear and the internal temperature reaches 165°F (74°C). 
    • Serve: Mix the yogurt dip ingredients in a small bowl. Rest the skewers for 3 minutes before serving warm with the cold sauce.
