Ingredients:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 lb hot Italian sausage, sliced
  • 3 medium potatoes, cubed and parboiled
  • 1 large onion, sliced
  • 1 each red and green bell pepper, sliced
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • ½ cup hot cherry peppers or pepperoncini, sliced
  • ½ cup pepper brine (from the jar)
  • 1 cup dry white wine
  • 2 cups chicken broth
  • ¼ cup flour (for dredging)
  • 2 tbsp olive oil
  • Salt, pepper, and Italian seasoning to taste
  • Optional: chopped parsley and Parmesan for garnish

Instructions:

  1. Dredge chicken in flour seasoned with salt and pepper. Brown in olive oil over medium heat. Set aside.
  2. Brown sausage in the same pan. Remove and set aside.
  3. Sauté vegetables (onion, peppers, mushrooms, garlic) until softened.
  4. Deglaze with white wine, reduce until syrupy.
  5. Add broth, pepper brine, potatoes, cherry peppers, and seasonings. Simmer 10–15 minutes.
