Hot Italian Chicken Sausage with Peppers, Onions, and Cherry Tomatoes

Ingredients:

  • 4 hot Italian chicken sausage links, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional, for extra heat)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup white wine or chicken broth (for deglazing)
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Heat the oil in a large skillet over medium-high heat.
  2. Brown the sausage slices for about 5 minutes until they develop a nice sear. Remove and set aside.
  3. In the same skillet, sauté the onions and peppers for 5 minutes until softened.
  4. Add the garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Stir for 1 minute.
  5. Toss in the cherry tomatoes and cook for another 2 minutes.
  6. Deglaze the pan with white wine or chicken broth, scraping up any browned bits.
  7. Return the sausage to the skillet, mix everything together, and let it simmer for 5 minutes.
  8. Garnish with fresh basil or parsley and serve.
