Ingredients:
- 4 hot Italian chicken sausage links, sliced into rounds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional, for extra heat)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup white wine or chicken broth (for deglazing)
- Fresh basil or parsley, chopped (for garnish)
Instructions:
- Heat the oil in a large skillet over medium-high heat.
- Brown the sausage slices for about 5 minutes until they develop a nice sear. Remove and set aside.
- In the same skillet, sauté the onions and peppers for 5 minutes until softened.
- Add the garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Stir for 1 minute.
- Toss in the cherry tomatoes and cook for another 2 minutes.
- Deglaze the pan with white wine or chicken broth, scraping up any browned bits.
- Return the sausage to the skillet, mix everything together, and let it simmer for 5 minutes.
- Garnish with fresh basil or parsley and serve.
